The vineyards are at the heart of the Bründlmayer Wine Estate

The vineyards belonging to the Bründlmayer Wine Estate are mostly laid out in terraces far from all motor traffic, and are unique in the diversity of their soil and microclimatic conditions.

For Willi Bründlmayer, ecological balance is of great importance.

Organic dung is used exclusively in the vineyards: green manure, cow dung and composted plant waste. The natural resources, soil, sun, water and plants are simply used intelligently. Humans serve and refine, but do not push into the foreground. Exhausted vineyards are cleared to then lie fallow for five years before replanting.

Small water sources have been arranged all around the vineyards to hinder erosion and improve the microclimate. Willi Bründlmayer relinquishes the use of herbicides.

Harvesting time.
Harvesting takes place between September and November. The grapes are fundamentally selected by hand and harvested into small boxes, resorted if necessary and brought as quickly as possible to the cellar.

Willi Bründlmayer uses only ripe and healthy grapes for making wine. A vineyard is often harvested two to three times consecutively to achieve wines that are even more subtle and authentic.

There are two extremely protective pneumatic presses available for the grapes. At only 1 bar pressure, the extraction strength is the same as a handshake among friends. The boxes used for harvesting are immediately cleaned with fresh spring water after each work procedure.
To retain aroma, the musts are fermented when cool, but not cold, in stainless steel or wood. Aging takes place in an earth cellar at an ideal temperature with high humidity. The wines, however, remain from three to 18 months in barrels according to variety.
